Dieser Amontillado - reifte über Jahre im Eichenfässern. Anfänglich über 8 Jahre als Manzanilla Fino unter einer Flor-Schicht gereift und weitere 7 Jahre oxydativ in Eichenfässern ausgebaut. Diese Prozedere verleiht einem Amontillado diese unverkennbaren Aromanoten.
Es erfolgte mindest eine 15-jährige Fassreifung. Hiervon werden jährlich nur gerade 4000 Flaschen produziert.
Appearance: Beautiful amber colour. Clear and bright in appearance.
Nose: Intense and elegant on the nose; a tempting seductress. Saline nuances and a trace of toasted hazelnuts.
Palate: Excellent balance and structure with a long finish. The typical dryness of amontillado sherry stands out and highlights its complexity. Lingering and satisfying aftertaste.
Food pairing: Traditional: Artichoke casserole / Innovative: Red tuna ceviche.

Points of interest
The amontillado sherries are one of the most interesting wines from the Jerez region. They first begin life as a manzanilla undergoing biological ageing for eight years under the unique yeast film known as the velo de flor. They then undergo seven years of oxidative ageing. The NV Amontillado Principe, from 30-year-old Palomino vineyards, spends eight years under flor and a further six years of oxidative aging. Amber-colored, it has aromas of candied oranges, hazelnuts, mushrooms and a touch of iodine. The palate is sharp and fresh, showing good integration. It represents good value for the quality it delivers.
