The single-vineyard Cava 2009 Ars Collecta Finca La Pleta Gran Reserva is pure Chardonnay from a vineyard in Costers del Segre aged in bottle for no less than 90 months (the bottles are hand numbered, but no information on the disgorgement date is available). The residual sugar was adjusted to seven grams, and the wine is quite attractive, varietal and somehow nutty with good acidity, easy to drink, quite lively. It has abundant bubbles that foamed and formed a head like a beer when I poured the wine, and they persisted more than those from its siblings.
